It's not that hard to do! I make my own jerseys (and swimsuits... and tights...and dresses) for the same reason. I'm not only tall but, um, large. And definitely not man-shaped. I've even tried shorts, but getting the chamois in straight is tricky, so I've gone back to buying them.
If you think you'd like to try it, a sewing machine with a basic zig-zag stitch is all you need. I have the serger, the coverhem machine, the computerized machine, and all the toys... but that's just because I like having toys.

(I have more bikes than any sane human being would want.)
If you think you'd like to try it, you can modify a basic zip-neck knit shirt pattern such as is offered by Kwik Sew, or buy a specific cycling jersey pattern such as is offered by Jalie or Green Pepper. I'd recommend starting with a Kwik Sew pattern if you don't have much sewing experience. Their fit isn't great, but the instructions are like a sewing lesson, very clear and easy to follow.
